Mexico celebrates 5 de Mayo!

A very important day for Mexico occured yesterday, the 5th of May. Every year on the 5th of May, a celebration of Mexican heritage and pride occurs. The celebration takes place across Mexico as well as in the United States. One of the most traditional foods made for this special holiday is guacamole, a favorite served with tortilla chips.

Here is a delicious, simple recipe for guacamole:
Ingredients:
  • 2 ripe avocados
  • 1/2 medium onion, minced
  • 2 tablespoons cilantro, finely chopped
  • 15 ml of fresh lime juice
  • 5 ml of salt
  • A dash of freshly grated black pepper
  • 1/2 ripe tomato, chopped
 Directions:
1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl.
2 Using a fork, roughly mash the avocado. Add the onion, cilantro, lime, salt and pepper and mash some more. Add the tomatoes last and mix!
3 Cover with plastic wrap and refrigerate until ready to eat.
